How to Test your Cake for Doneness

 

You can test your cake for doneness in two ways:

Toothpick/Fork Method

Take your toothpick or utensil and poke the cake from the top center down into the middle. When you pull it back out, the toothpick should be dry. If you notice crumbs or wet batter, let the cake bake longer.

Hand Method

Press down lightly and quickly on the top center of your cake with the palm of your hand. If it’s ready, it will spring back; if it gives, extend the baking time.

Once your cake is ready, remove it from the oven and allow it to cool in the pan for 5-10 minutes before transferring to a cooling rack.

Additional tips:

You also want to keep in mind that certain substitutions could affect baking time. When you substitute dry ingredients for wet ingredients, such as fruit or liquid sweeteners, baking time will generally be longer. For cakes where you’ve doubled or tripled the ingredients, you’ll need a longer baking time and a slightly lower temperature.
