Einkorn Pumpkin Cake | Anita's Organic Mill
There is definitely a theme running through this month's newsletter other than Thanksgiving. All three of the dessert recipes contain vegetables. How can anyone feel guilty about eating desserts when they contain delicious seasonal vegetables? It’s a win, win really - extra veggies wrapped up in a super tasty package of gloriously exquisite baked goodness. Did you all bring your stretchy dinner pants? Here we have used the oldest of our ancient grain flours Einkorn to add a beautiful richness to the cake. Pumpkin is a must this time of year and the combination of these ingredients works beautifully. Enjoy!

  • 1 1/4 cup Pecans, lightly toasted & finely chopped
  • 1 cup Anita's Organic Einkorn Flour
  • 1 1/4 cup Anita’s Organic White All Purpose Flour or White All Purpose Spelt Flour
  • 2 tsp Baking powder
  • 1 tsp Baking soda
  • 1/2 tsp Salt
  • 1 1/2 tsp Pumpkin spice (or 1tsp cinnamon, ½ tsp nutmeg, ½ tsp all spice)
  • 2 tsp Cinnamon
  • 1 cup Anita's Organic Cane Sugar
  • 1/2 cup Anita's Organic Coconut Sugar
  • 3/4 cup Unsweetened applesauce
  • 1/4 cup Oil
  • 1/2 cup Milk of choice
  • 1 1/2 cup Pumpkin puree (approx. 1 x 398ml can)
  • 4 tbsp Ground flax meal
  • 1/4 cup Water
  • 1 tbsp Vanilla extract

Cream Cheese Frosting

  • 1/2 cup Butter (non-dairy or regular)
  • 8 oz Cream cheese (non-dairy or regular)
  • 4 cups Anita's Organic Icing Sugar
  • Zest of 2 Lemons
  • 1 tbsp Vanilla extract



  • Preheat the oven to 350˚F and line a 10 x 12inch pan with parchment paper.
  • In a heavy based pan lightly toast the pecans (whole) for 5 to 10 minutes. Do not allow to burn. When cool enough to handle chop them finely and set aside.
  • In a large bowl sift together the flours, baking powder, baking soda, salt, pumpkin pie spice and cinnamon. Stir in the sugars and mix well. Next stir in 1 cup of the chopped pecans, reserve & set aside the extra ¼ cup to sprinkle on top of the finished cake.
  • In a medium sized bowl or jug, mix together the applesauce, oil, milk, pumpkin puree, flax meal, water and vanilla extract. Whisk this mixture together and leave it to sit for 5 to 10 minutes.
  • Make a well in the center of the dry mixture and pour in the wet mixture. Mix until just combined and then scrape the batter into the lined pan. Bake in the center of the oven for 30 to 40 minutes. Insert a wooden toothpick in the center of the cake to ensure its cooked fully. Remove from the oven and allow to cool down in the tray.
  • When fully cool remove from the pan and transfer to a serving plate. Decorate with cream cheese frosting and the remaining ¼ cup of chopped pecans if desired. Refrigerate until ready to serve.

Cream Cheese Frosting

  • Place all ingredients into mixer and whisk until smooth, soft and fluffy. Keep refrigerated until required.

    Loved this recipe, moist interior with part of part cake texture. Flavorful & tasty with the diff spices! I improvised with the frosting to ingredients on hand, using ricotta cheese, coconut nectar, coconut milk & arrowroot powder gently stove heated to smooth. Wonderful substitute and complement with the cake.
