Make your cookie dough in advance and freeze it so you’re ready to bake anytime. Prepare the dough as per the recipe; then roll it into a log with the help of parchment paper. Stick it in a freezer-safe plastic bag and store for up to 3 months. When you’re ready to bake it, slice the cookies while the log is frozen, and lay them out on the pan to sit and thaw while your oven preheats.

Alternatively, you can shape your cookies on a baking pan, put it in the freezer, then add the frozen cookies to a freezer safe bag for storing. Again, no need to thaw ahead of time — just let them sit while your oven is heating.
