As the evenings start to draw in, warm comforting desserts start to call to us. This Chocolate Lava Cake is one such dessert that hits all the right spots. A soft rich cake with a decadent gooey chocolate sauce on the bottom, you can’t really go wrong. Made with our fabulous Einkorn Flour this decadent treat should be eaten (occasionally) with your favourite ice cream and fresh berries.

Ingredients

Change Units:
  • 1 cup Anita's Organic Einkorn Flour
  • 2/3 cup Anita's Organic Cane Sugar
  • 1/4 cup Anita's Organic Cocoa Powder
  • 2 tsp Baking powder
  • 1/4 tsp Salt
  • 2/3 cup Milk, regular or non-dairy
  • 1/3 cup Sunflower oil
  • 2 tsp Vanilla extract
  • 1/3 cup Anita's Organic Chocolate Chips
  • Cooking liquid:
  • 1/4 cup Anita's Organic Cocoa Powder
  • 1/2 cup Anita's Organic Cane Sugar
  • 1/2 cup Anita's Organic Light Brown Sugar
  • 1 1/2 cup Hot water

  1. Lightly oil the inside of a 3 to 4-quart crock pot.
  2. In a medium size bowl mix the einkorn flour, sugar, baking powder, cocoa powder and salt. Make a well in the centre and add the oil, milk and vanilla extract. Mix until just combined. Stir in 2/3’s of the chocolate chips (set the rest aside). Scrape the batter into the crock pot and level out. Sprinkle with the remaining chocolate chips.
  3. In a jug or a bowl mix the cooking liquor ingredients together. Gently pour the liquid over the cake batter. Place the lid on the crock pot and cook on high for 2 hours. Test the cake is done by inserting a wooden skewer into the centre. If it comes out clean the cake is ready – if not allow to cook until it is.
  4. Once cooked turn the crockpot on to the ‘keep warm’ setting. Serve the cake warm with ice cream and fresh berries. Best eaten day made & while still warm.

Notes

Crockpots vary from brand to brand so these timings may vary a little too.

We used our Einkorn Flour in this recipes but Fine Grind Spelt or Whole Wheat Pastry Flour would also work well.
