Using a stand mixer with a dough hook – mix together the 1/3 cup warm water and yeast together. Let stand for 10 minutes or so until it bubbles and becomes frothy.

Add the rest of the water and oil and mix well.

Add the salt to the water mixture and start to add the flour 1 cup at a time. Allow the mixer to work in each cup of flour before adding the next.

When all of the flour has been fully incorporated add the Harvest Grain Muesli to the mixture. Allow the mixer to mix the dough for 7 to 10 minutes until the dough is smooth and elastic.

Remove dough from the mixer bowl and knead on your countertop for a few more minutes.

Place the dough in a clean, oiled bowl. Cover with cling wrap and allow to double in volume in a warm, draft-free environment – this will take an hour or two depending on the warmth of your kitchen.

Line 2 baking sheets with parchment paper and preheat the oven to 425F. Place a small, square pan in the bottom of the oven (this will be used to create steam during the cooking process).

Once the dough has doubled in size remove from the bowl and place on a lightly floured work surface. Divide into two equal pieces and shape into free formed loaves. Place the loaves on the lined baking sheet and sprinkle liberally with flour. Cover loosely with cling wrap or a clean tea towel and set in a warm spot to double in volume again.
