Blissful summer days by the lake or the ocean need to be followed by a light, decadent dessert and a chilled glass of wine. Well, we think so anyway. This creamy, fruity, scrumptious dessert requires no baking just a little patience (as it has a few steps) and is best prepared ahead of time. Keep it in the freezer until you need it and then allow it to thaw in the fridge for about 4 to 6 hours. Once thawed keep it refrigerated. Enjoy as is or with a dollop of whipped coconut cream......and don't forget the wine :-)

GF Chocolate Cupcakes

Cupcakes may have fallen out of favor a little in recent years but we still love them! There’s nothing quite like your own personal, dainty little cake that can put a smile on our face and give you a warm hug to the belly. Decorate these with the frosting and toppings of your choice. It can be as simple as a drizzle of a quick chocolate ganache or some whipped cream (or coconut cream) and fresh berries. Or they can be decorated as elaborately and decadently as you like.

Double Layer Lemon Raspberry Cheesecake

Our cookie mixes are very easy to use to make delicious pie crusts. Here we used our Oatmeal Currant Cookie mix to make the base for this (almost) raw cheesecake. As the base is cooked we can’t call it raw but we can call it simple. Simple and utterly delicious.

Chocolate Pie with Oatmeal Currant Cookie Crust

Now, this is a pretty simple dessert, made with just a few ingredients but utterly delicious. Think giant cookie with a rich chocolate pudding on the top. We have used our Oatmeal Currant Cookie Mix to make the crust but you can actually use any of our signature cookie mixes. The hardest part about this dessert is having the patience to wait for it to set! Serve as is or with a nice dollop of whipped coconut or dairy cream.

Sprouted Spelt Apple Cake

By sprouting grains, we enable our bodies to absorb many more of the essential nutrients the grains possess that are often lost to us as during digestion. The sprouting process transforms the grain from a dormant bundle of food to a living plant, enabling our bodies to freely utilize all the great nutrients the grain has to offer and making digestion much easier. Here at Anita's we currently sprout five different grains (Spelt, Rye, Hard Red Wheat, Kamut, and Buckwheat) all of which we mill into superior quality flours. For this recipe, we are using one of our favorites – Sprouted Spelt Flour. This delicious cake can be enjoyed as is, or dust with icing sugar and serve with a little vanilla ice cream and a drizzle of your favorite caramel sauce.

Ancient Grain Chocolate Cake with Warm Chocolate Sauce

Sometimes you just need a warm, comforting dessert that hits the right spot and ticks all the boxes. This cake is very quick to make and you can have dessert on the table in 30 minutes. Use cold coffee or orange juice to intensify the chocolate flavour in the cake (oh, yes it does) and a little touch of booze in the chocolate sauce adds an extra level of richness to the warm chocolate sauce (omit if serving to children or DD's).

Easter is fast approaching so it's time bring on the bunnies and chow down on chocolate. But before you do, save a little room for these Easter themed cupcakes. Loosely based on a traditional Simnel Cake these little delicacies are a delightful treat for any springtime gettogether. Marzipan can be a little hard to find sometimes, but if you are lucky enough to find a good store bought one, then it will save you a little time. If you can't find any, then have a go at making your own or if there is a nut allergy then skip the marzipan entirely and top these little beauties with a swirl of lemon frosting instead.
