Almond & Poppyseed Spelt Loaf

This not too sweet loaf has hints of almonds and poppy seeds which make for a great combination. The almonds add a subtle richness to the cake and the poppy seeds add a delicate crunch to every bite. Poppy seeds, though often a little underrated, are rich in calcium, iron and magnesium so make a great addition to many dishes. Enjoy this loaf as it is or with a light touch of your favorite jam or nut butter. For an altogether sweeter option or to elevate this to a dessert treat drizzle with the almond glaze and sprinkle with more flaked almonds for that extra flourish. Just fabulous!

GF Blueberry & Lemon Scones

Scones are always a favourite no matter what time of year. There are so many variations and flavour combinations that it's sometimes hard to choose just what kind to make. Here we have combined the classic flavours of blueberry and lemon and added a touch of cinnamon. We have used our Brown Rice Flour for our no-gluten friends and these scones can be easily adapted to be dairy free too. Enjoy them as they are while still a little warm from the oven and with a drizzle of some of the sweet zesty Lemon Glaze over the top for an extra treat. These are a little delicate so feel free to add a touch of Xantham Gum (1 tsp) to the mixture if you wish.

No Knead Pumpkin Loaf

If you still have some cooked pumpkin from the fall or some canned puree at the back of your pantry then this no-knead loaf is a lovely recipe to try. We used a combination of our Sprouted Whole Wheat Flour and All-Purpose Flour to give it some 'fluff'. Be sure to toast or roast your pumpkin seeds to bring out their delicious flavour.
